I think he sees some of the Jedi in the movies as "his" characters and probably wants to decide the fate of his characters.
Which is fine, but he probably should have mentioned that to someone before he let them write stories about those characters.

Perhaps they intended on using the DNA to clone spies, a la Slick-style? Imagine the amount of damage such spies could cause, and it wasn't very hard for Boba to infiltrate the clone cadets.

I think it was just a bad idea. They should have just been trying to destroy it, not capture it.

That would be kind of like writing a readable book with safeguards against someone reading it and writing down what happens in it. But yeah, it isn't too farfetched to imagine that the "master DNA" has some kind of additional, possibly useful information that didn't make it into the altered copies. Like having the source code of a program.

I would assume that the Kaminoans (who pride themselves on quality) have some sort of safeguards built into the DNA that keeps it from being analyzed. Otherwise it would be really easy to make a genetic specific virus. Also, why else would they need copies of it?

Maybe they could have used it to make some kind of virus or other agent that exploited Jango Fett's genome. Of course, then they could just take DNA from the somatic cells of dead clone troopers. Asset-denial doesn't really make sense either because then they could have just shot it.

I assume it was simply asset-denial; (i.e. stealing it, so the Kaminoans / Republic could no longer use it).
Grievous told Ventress that the clone DNA could unlock new possibilities for the Seps.
But maybe, the CIS wanted to make their own clones; or some type of Grievous-esque type cyborgs.
I like this idea.
One thing I do love is your idea of using an EMP on Grievious; or a giant Ion canon - like the Malevolence had.
(That would be pretty cool to have in a TCW episode... somehow short-circuit the good general; and have Dooku, or Wat Tambor rescue him; (in time to be in Episode III).

I had the idea of droid-poppers and Grievous after again watching "Duel of the Droids" and "Innocents of Ryloth" the other night where the grenades were used against both B1 battle droids and B2 super battle droids. My idea was that since they are capable of affecting different sized droids, they may also prove effective (at least to some extent) against a cyborg like Grievous.

This current oftentimes is to much for the wire/circuitry and either causes a short/flips a breaker, or melts processors/capacitors. In Grevious' case he has a humanoid brain not a processor. Therefore his mind would be unaffected. His body however would be affected with results anywhere from a quick spastic moment to system failure.
Assuming "droid poppers" work the same way as real-world EMPs. The only time I can remember them affecting anything but battle droids themselves was in "The Defense of Kamino," where a grenade that was explicitly an EMP briefly disabled the armor of the ARC trooper who threw it.
I'm not sure what the actual RPG materials say about it, but I know the Grievous character in the Miniatures game could be affected by ion damage, if that helps.

I don't think it's ever been established, but I guess it would depend on the grenade. If it just disabled all machines or electrical systems, then yes, that would presumably incapacitate him and possibly kill him (with a loss of life support), but if the grenade normally disabled battle droids just by turning off their electronic brains somehow, it might not have any effect against Grievous' organic brain.
